What is Atlas Spring salt, and where does it come from?

Atlas Spring (also known as Moroccan Mountain salt) is a natural coarse gourmet salt that comes from the area in western Morocco, where the Sahara desert meets the Atlas mountain range. Centuries ago, an old well was dug up into the mountain’s rock face, from which the salt water is hauled up and then placed onto salt pans to be evaporated under the hot Sun. Atlas Spring salt has also been called the tears of the Greek God Atlas.

The story of how the salt came to be, goes like this: The Greek God Atlas, who was carrying the world on his shoulders, saw the people’s sufferings and pain. Atlas started crying, and his tears gathered in the Sahara, where they met with the hot Sun. The Sun turned Atlas’ tears into the treasures of Sahara: beautiful salt crystals. What a great history this salt has!

An interesting recipe to try out with our Atlas Spring salt:

Strawberry Tomato Summer Salad. This is a fun and light recipe to make this summer! It is quick and easy to make yet has a mouthwatering and refreshing taste. Also, its fresh components make it an ideal (gluten-free!) salad for vegans.

At first, it might sound weird to use strawberries together with tomatoes, but it’s worth a try! The flavors of this unusual combination are so lively and delicious that you will keep making this salad again and again!

Our Atlas Spring salt gives a final little touch to this salad and makes it taste amazing. The secret tip for this salad is to get sweet and ripe strawberries, so they go well together with the acidity of tomatoes. Don’t forget to also look out for ripe tomatoes, as raw ones can make the salad taste bitter.

You will need:

  • 450 grams of cherry or grape tomatoes, slice them into halves
  • 450 grams of sweet strawberries, dice them into quarters
  • One shallot, diced
  • Half a lemon’s juice
  • One tablespoon of extra virgin olive oil
  • One teaspoon of Atlas Spring salt
  • Half teaspoon of black pepper (we recommend using our Kampot black pepper)
  • Two tablespoons of fresh chopped parsley

Instructions:

  • In a medium bowl, combine all the ingredients. Using a big spoon, slowly mix the tomatoes and strawberries, careful not to smush them.
  • You can now take a little bite to taste. Add more salt and pepper if needed.
  • Serve this delicious salad as a side dish or on its own.

Enjoy! :)

You can store this strawberry-tomato summer salad in a fridge for up to three days!
