Summer Grilled Veggie Tacos with Strawberry Salsa and Chocolate Pepper

This is the ideal recipe for a quick and light dinner in the summer. It is easy to make and tastes fantastic while introducing fun flavors that the Chocolate Pepper brings. 

 

You will need:

For tacos:

  • Pack of tacos
  • 1 zucchini thinly sliced lengthwise
  • a large bundle of asparagus
  • 5 mini sweet bell peppers
  • 2 avocados
  • A handful of cherry tomatoes
  • goat cheese
  • veggie marinade
  • 3 tbsp of olive oil
  • 1 tsp of chili powder
  • ½ tsp of cumin
  • ½ tsp of cayenne
  • the juice of one lime
  • Our Sweet Salt
  • Our Chocolate Pepper

For the strawberry salsa:

  • 2 cups of fresh strawberries
  • 1 small red onion
  • ¼ cup of fresh basil
  • ½ jalapeno
  • juice of half a lime
  • splash of olive oil
  • Our Sweet Salt
  • Our Chocolate Pepper

Time to cook:

  • Firstly mix up the marinade ingredients and set them aside to wait.
  • Secondly, cut the strawberries and chop the onion into small pieces, mince the basil and jalapeno, and add everything into a small bowl. 
  • Then it is time to juice half a lime and add a splash of olive oil and our Sweet salt and Chocolate pepper (take this part slowly, as you need to adjust the amount of spices to your liking! Don't be afraid to taste it and add whatever feels right!), drizzle over the strawberry mixture and place salsa in the fridge until ready to serve.
  • Then thinly slice the zucchini and add to a bowl with the asparagus and whole peppers. 
  • Place the vegetables on a grill and drizzle with the marinade. The peppers should go on the grill first because they take the longest to obtain the desired char on medium/low heat. 
  • Add the zucchini and asparagus when the peppers are almost done cooking (5-8 minutes), as they will only need a few minutes on each side.
  • Then, begin assembling your tacos by warming them on the grill. Add some grilled vegetables (slice the peppers after they have charred on the grill), strawberry salsa, a few slices of avocado, some chopped cherry tomatoes, a sprinkle of goat cheese, and a squeeze of fresh lime juice before serving.
