In the 19th century, Hawaiians began producing large amounts of alaea salt using the salt-making techniques they learned from the Europeans and became a leading supplier to fishermen in the Pacific Northwest for curing salmon.

What is Alaea Salt, and where does it come from?

Alaea salt is a red salt exclusively found in the Aloha islands in the Pacific and has been used by the Hawaiian natives for centuries. This unique sea salt is located between the rare layers of lava rock in the sea. The name for this salt comes from the red alaea clay that the salt is mixed with. In addition to the name, the clay gives the salt its stunning and outstanding red-colored look.

The modern, gentle salt production takes place today on the natural island of Molokai, Moloka'i, in the middle of the island chain of Hawaii. It is obtained from the Pacific Ocean using conventional sun evaporation techniques, enabling crystals to form when combined with Hawaiian volcanic clay. One of the most sought-after natural salts in the world, red alaea salt is manufactured organically by hand.

Tuna Poke

This is a fresh and delicious recipe to try at home, together with our red Alaea salt. Keep in mind to use only fresh ingredients to get the best results. It's a super easy yet amazingly delicious recipe. 


 You will need (this portion makes two small servings) : 

  • 100gr of Sashimi-grade tuna, cut it into 2cm cubes 
  • Just a tiny bit of sesame oil (2-3 drops is enough)
  • One teaspoon of golden shallot
  • Just a tiny pinch of grated ginger
  • One stalk of spring onion, only the green part
  • Two teaspoons of light soy sauce
  • One teaspoon of toasted sesame seeds
  • a good pinch of Alaea Red salt, either fine or coarse (both work, although we recommend using the fine one for this recipe)
  • A tiny bit of Tabasco sauce (just as much as you prefer)
  • One teaspoon of extra virgin olive oil

 

Instructions:

  1. Firstly, you must pre-chill the bowl you are going to mix everything in! Either place it in a fridge for at least an hour or plunge the bowl into ice-cold water for 15 to 30 minutes.
  2. Then chop the golden shallot and the spring onion finely. 
  3. Place the tuna and the rest of the ingredients into the chilled bowl and mix it all.
  4. Time to taste! Now adjust the flavors and add whatever you wish to your liking.
  5. Serve right away and enjoy! :)
